Presentation of different biopolysaccharides and their chemical and physical properties

Biopolysaccharides produced by acetic acid bacteria have been used to produce bio-patches, fabrics, artificial arteries etc. Biofilms from acetic acid bacteria are composed of two predominant exopolisaccharides, cellulose and levan. Biofilms, which will have been grown beforehand, will be analysed in terms of their chemical (solubility in water) and physical (viscosity) properties to determine their composition (cellulose or levan) in a frame of short experiments.
